Sweet Potato Pasta: Dairy & Gluten Free

I absolutely love sweet potatoes they are no joke one of my favourite foods and when you combine that with a “creamy” pasta dish that’s actually guilt free I’ve died and gone to heaven! Since making this recipe I’ve eaten it every week for about a month so I hope you enjoy it as much as my man and I do! PS I like to not tell him its actually healthy until after he has tasted it 😉 that way I get an honest reaction and this dish is a winner!

Also a little tip for incorporating pasta into your healthy diet is to find the gluten free options, look for brown rice, quinoa and even spelt-based pastas you will feel much less bloated and lethargic after!

Like most of the recipes I share there is plenty of room to experiment, you can use more or less of anything to achieve your desired taste so go wild! Warning this makes a lot of sauce so this is a perfect meal for left overs 😉

Ingredients:

  • 1 large or 2 medium sweet potatoes
  • 1 cup raw cashews
  • 2 garlic cloves
  • 1 – 2 tbsp. vegetable soup powder
  • 2 – 4 tsp. Nutritional Yeast (buy from a health food store)
  • Dash of cinnamon, nutmeg, paprika, salt, pepper, anything you like!
  • 1 tbsp. tomato paste
  • Water (add as you go to reach desired consistency and so everything can blend)
  • Packet of gluten free pasta of choice

Method:

Slice up sweet potato, drizzle with little olive oil and place in 200 degree oven and cook for about 30 minutes, until soft enough to blend! At the last 10-15 minutes add the garlic cloves to oven and cook.

Meanwhile soak cashews in water while potatoes cook, this will make them easier to blend and be creamier.

Once sweet potato and garlic are cooked take out of oven and allow cooling!

While cooling drain cashews and place in blender with a little fresh water, just enough to blend smoothly (may need to add little more as you go so start of small). Blend until smooth and creamy!

Add to cashew blend the garlic cloves, soup mix, spices, nutritional yeast and tomato paste. Once sweet potato has cooled gradually add bits to the blender, you will need to add a little water gradually too.  Also if like me your blender gets waaayy too full simply pour out some of the mixture and continue blending everything then mix it all together in a large bowl!

Remember you may need to add quite a bit of water to get it blending smoothly, so keep taste testing and add more of anything you desire.

Now that your sauce is made cook the pasta and in a separate saucepan heat up the sauce on the stove, be sure to mix frequently so it doesn’t accidentally cook! (You can also use the microwave but always best to use it as little as possible!)

Drain the cooked pasta and return to saucepan, pour in the sauce and mix until everything coated. Serve with a little extra sea salt & pepper to taste!

 

This meal is the perfect alternative to creamy, decadent pasta cravings that your man will absolutely love too! Yay! Bon Appetite 🙂
