Super Quick & Easy Recipe: Bircher Muesli
Mornings can often be rushed even a little stressful, leaving little time and patience to sit down to a beautiful nutritious breakfast which is why I LOVE Bircher Muesli!!! You can make a big batch that will last you days, store it in individual serving cups so you can just grab it and go or add some fresh fruit (if you have time) and tadaaa delicious AND nutritious breakfast to start your day without any stress & a full belly 🙂
Also this recipe leaves plenty of room for creativity, this just happens to be my favourite combination but feel free to experiment! PS Coyo is also a delicious alternative to greek yoghurt!
- 1 cup natural oats
- 1/2 cup greek yoghurt or coyo
- 1/2 cup coconut water
- 1/2 cup goji berries and/or fresh berries
- 1/2 cup shredded coconut
- 1/4 cup slivered almonds
- 2 tablespoons of raw honey or sweetener of choice
Mix everything together in a large bowl and ensure it is evenly mixed! Taste test and add in anything more, depending on consistency you desire you may like a little more yoghurt or coconut water, remember feel free to play around!
Store in fridge overnight so all the flavours soak well and becomes soft & juicy! Double/triple the ingredients to make enough for a few mornings!
