Healthy Oatmeal Cookies: My go to recipe!
I looooovee cookies and all sweet things so every time one of my baking experiments with healthier alternative ingredients works out (which sadly isn’t every time haha) I can’t wait to share with you!
Oatmeal cookies or Anzac cookies as us Aussies call them are one of my favourite simplistic cookies but they are packed with sugars, butter and gluten filled flour! So this option still contains sugar but instead Coconut Palm Sugar a much better option that is released much slower in your body than white sugars so won’t give you that massive high then low! And instead of butter I use Coconut Oil which put simply is the best, full of healthy fats and a delicious flavour I actually prefer it for baking than butter and I’m sure you will too after getting used to it 😉
For these cookies I used dried cherries and blueberries but as always you can experiment with whichever dried fruits you like and for an extra treat add in some chocolate chips!
- 1 cup almond meal
- 1 cup rolled oats
- 1 tsp cinnamon
- 1 tsp vanilla essence
- ¼ – ½ cup desiccated coconut
- 3 tbsp coconut sugar
- 3 – 4 tbsp coconut oil (melted)
- 1 egg
- Extras of your choosing!
Preheat oven to 170 degrees.
Combine all wet ingredients until completely smooth. Slowly add in dry ingredients bit by bit so clumps don’t form, I actually mixed everything with a fork!
Once all ingredients are combined add in your chosen extras of dried fruit or cheeky chocolate! Use as much as you desire, just keep in mind the more you use the less healthy the cookies become (sorry!).
Roll into tablespoon sized balls and press down slightly. Bake for 15 – 20 minutes until golden.
Enjoy with a cup of tea for a guilt free sweet treat!
PS This recipe only makes about 10 cookies so simply double up all ingredients for more to last you longer 😉
