Banana Pecan Choc Chip Cookie Recipe
I love healthy living but I also love chocolate and sweet treats!!! So I’m always experimenting with delicious healthy alternatives and this one hits the spot perfectly!
4 ripe bananas
1 cup oats
½ cup almond meal
¼ cup coconut flour
¼ cup dessicated coconut
1 teaspoon cinnamon
1 teaspoon baking powder
3 tablespoons natural maple syrup
¼ cup coconut oil
1 teaspoon vanilla
½ cup raw pecans
½ block dark choc (at least 70%)
Preheat oven to 170 degrees Celsius.
Combine all dry ingredients together in a bowl and mix well so there are no clumps.
In a separate bowl, mash bananas and add maple syrup, vanilla and coconut oil, mix together then add to dry ingredients.
In a blender combine chocolate and pecans until only fine pieces are left (a few chocolate chunks is fine!) then add that to the bowl and mix everything together well!
Spoon into balls from 1 tablespoon and press down with fingers or fork! Bake for 20-30minutes until nicely browned! Enjoy warm then store in fridge and I suggest heating them up for a few seconds in the microwave before eating 🙂
